L'Atypic

T his wine is ‘atypical’ in terms of its blend: 50% Malbec (or Côt depending on the region) and 50% Cabernet Franc. Our Atypic 2015 is fresh and fruity, described as sensual by top sommeliers. Very concentrated yet possessing very soft tannins, this wine is rounded on the palate with red fruit aromas captured at the height of their freshness. All of this is elevated by Malbec’s peppery touch. Best drunk from now with dishes of all kinds apart from fish, serve slightly chilled at 17-18°C. Very enjoyable with a summer barbecue.

Cultivation: Organic and biodynamic since 2000. Demeter certification since the 2000 vintage. Double Guyot pruning, spontaneous winter grass cover. Soil tillage during the spring, every other row ploughed. Treatments combining small quantities of Bordeaux mixture with herbal teas such as horsetail or nettle.

Winemaking Native yeast. Fermentation at a controlled low temperature (23°C). Bled off at the beginning of the fermentation, as the Malbec is rather juicy. No post-fermentation maceration, bottled after a short maturation period to capture the fruit’s freshness.
